Hey ya’ll, it’s been a while…

We’ve had a crazy start to year with plenty going on. The restaurant has been very busy and we’re finally bedding into the wonderful space (if you’d like to visit us, please book a table at our Hang Fire Southern Kitchen website here).

Our primary charity partner this year is Action Against Hunger – of which we’ll be holding special fundraising events throughout the year, see events here. We’re also supporting a number of local charities, including Barry Town’s documentary about their recent promotion and the amazing U11 girls team (future starlets right there) to name just a few.  We think it’s important to give back to a community that has supported us, and equally to others in need further afield – otherwise, what’s it all about, right?

Our cookbook has been flying off the shelves, especially with BBQ season coming up. You can grab yourself a copy online here, or if you want the free hug and signed copy, pop along to the restaurant and we’ll be happy to oblige! Here’s a few recipes from Wales Online to give you a flavour of the book (pun intended!)

16464381_1667177279975356_8723567023331737600_n‘BBQ in Wales’ – We were recently featured in the Observer Food Monthly Top 50 list as one of the best places to visit in the world – shaaaamazing! It’s great that Welsh eateries are on the map and we’re super proud to champion that worthy cause.

Tim Hayward, author, columnist, critic and broadcaster popped to our restaurant to review us and had this to say about Barry and us. Well worth a read.

We were invited to give TEDx Talk, in April, which is a particular BBQ career highlight for us. If you’re not familiar with TEDx Talks, it’s a non-profit media organization which posts talks online for free distribution, under the slogan “ideas worth spreading”. We’ll post a link when our video has been uploaded, meanwhile here’s a still of us looking nervous in front of a huge sell-out crowd at Cardiff’s Tramshed. Hang Fire Faithful, we need your vote!

Well Howdy….. 

It’s about time we said a huge thanks to each and everyone of you meat-lovers who’ve supported us through the first few months at the Hang Fire Southern Kitchen in our beloved Barry. We have fed over 6,000 of you since opening and the response has been overwhelming. Couldn’t have done it with the support of the Hang Fire Faithful. 


The Hang Fire Cookbook is officially launched and in good old fashioned Hang Fire style we had a massive party. It’s been an honour and privilege to be signing your books and administering the free hug which comes with every single copy. We are inspired by the number of people buying smokers and giving Slow & Low a go!

And finally – we need your help! We would be absolutely thrilled if you voted for us in the Observer Food Monthly Awards. We’d love to represent Wales in the New Cook Book category. The closing deadline is 1st July, so please get to voting people! Link is here…

New Website Launch!

Hello Bar-B-Cuties,
We have a new website dedicated to our new restaurant, Hang Fire Southern Kitchen, which will officially open from 9th March. OK, we may still be painting skirting boards and dusting light shades around you, but hey, at least you’ll have the ribs you’ve so missed!

The big deal is that we have an online booking system built into the new website, but it’s worth noting we reserve a small number of tables for walk-in customers. 

Everything is scratch-made and prepared fresh to order (the barbecue can take up to 21hrs to smoke, but don’t worry, we’ll get that started before you arrive). We’re very much looking forward to firing up our custom built grill and wood-fired smokers, showing you our new home, introducing you to the Hang Fire A Team and feeding you some of the new southern dishes we’ve been working on.

Yeah, yeah, we know it only the first of November and we’re talking about Christmas, next thing you know we’ll be nibbling on an Easter egg… but hey, we’re giving you a heads up on our new way of getting your hands on goodies; from Turkeys to t-shirts, rubs to sauces even some side dishes and gifts.

Due to last years epic fail at being able to use spreadsheets, our lovely friend Lisa, decided we should go digital, so has made a lovely little website that’s super easy to use and super secure. Our hero.

The Hang Fire BBQ Cook Book is a-comin’

Great news fellow barbecue fanatics, we’ve recently secured a publishing deal with Quadrille, a major, international publisher. We’ve completed the first draft already and will be finalising the photoshoots and last edits soon. We’re looking at a release in May 2016.
In our book, we’ll show you how we built our trailer smoker, tips on converting any grill into a home smoker, take you though our road trip where we went coast-to-coast and, of course, tons of recipes to try at home. We hope you’ll enjoy this book, we’ll be releasing sneak previews and tasters from the book early next year. We’ll keep you posted as to when and where you can buy a copy.

Hot out the smoker, Hang Fire Smokehouse announce cook book deal
They have been crowned ‘Best Street Food’ by the BBC, were the first to bring slow and low BBQ to Wales, launched Wales’ first craft soda, fed international celebrities and served thousands of plates of American style barbecue at events up and down the country, but things just got bigger for Hang Fire Smokehouse, as they announce a brand new cook book for 2016.

The book will tell the story of their journey across America, including pictures and tales of their adventures, how do build your own smoker, detailed knowledge about grilling and smoking and will contain over 100 the recipes. The book is due for release in spring of next year.

Shauna Guinn, of Hang Fire said: “We were approached by publishers, Quadrille back in May following our win at the BBCR4 Food Awards and have been working on the book ever since. We are so pleased to finally be able to share our news – it’s been hard to keep it quiet!”

“The book is going to be jammed pack with everything you need to know about smoking at home. We can’t wait to share what we’ve learnt with everyone.”

The announcement was made over the weekend during their sell out  ‘Alchemy of BBQ’ Masterclass at Abergavenny Food Festival. Tickets for their masterclass were the first to go and sold out in just 24hrs.

Partner, Samantha Evans added: “The food festival seemed like the perfect place to make the announcement. We delivered our masterclass to an audience made up of people who were really keen to dive into the world of slow and low and folks that have supported us from the beginning. It seemed right for those to be the first people to know.”

Sarah Lavelle, the publisher from Quadrille working with the girls, said: “We were fascinated by Sam and Shauna’s American adventure. They are infectiously passionate about what they do and hugely knowledgeable about their craft, so we are delighted to help them pass on their stories and recipes to fans, old and soon to be new.”

Meat the Pretzel

So we’ve been conspiring, scheming and divising new and interesting ways to convert our beohemoth BBQ into tasty street food freindly portions as we hit the festival circuit through the summer. Pretzel buns aren’t a new thing in the States, in fact good ole’ Wendy Burgers launched with one a little while ago (thinking it’s hip to be square!). We’d been on the search for a baker to make this tasty little bun for us for over 18 months (I know! It’s easier to find an NHS dentist in Splott than get a baker to take on a new project in Cardiff!). Then, it happened. Drowning our sorrows one day in creme patissiere in Cocorico, we met owner Laurien, who listened to our baking tales of woe and casually said “I’ll have a go.” Thinking that all our doughs had risen at once, we shook on it there and then and the results will be launched every weekend in May at Street Food Circus http://www.streetfoodcardiff.com/  – But be aware, ‘Meat the Pretzel’ will be somewhat limited as every component is hand made, first come first fed ya’ll.

So what will we have at Street Food Circus…

We’re launching with two new ‘Meat the Prezel’ buns. Firstly the Reuben, of which I’m sure you’re all a fan of. Local Welsh brisket, cured for a week, then smoked to Pastrami perfection over oak for 12hrs, marry that with a blanket of nutty Swiss cheese, a sliver of jumbo dill pickle then add a generous dollop of Russian dressing, and for those that like it, a heap of warm, sweet and sour sauerkraut.

Secondly, we’ll have the ‘Yard Bird 1/4 Pounder’. A 24hr aromatic-brined, 4hr smoked, butterflied free range chicken thigh that we’ll finish on our Texas grill for extra flavour. That’ll sit on a herby lettuce nest with fresh, crunchy ‘slaw made with our Alabama White BBQ sauce. We’re hoping this will be one of the best chicken burgers you will have tasted!

And as if that wasn’t enough….. we’ll have our beers for sale to wash it all down.

Food Festivals, getting saucy and setting up shop…

So we’ve had a blast this Summer from feeding thousands at Abergavenny Food Festival to bedding into village life in Llantwit Major to smoking out the good folk of Penarth at our pop-up at The Pilot. Here’s a few pics of the madness from Abergavenny, then we’ll talk about getting your smoked meat orders in for Christmas… yes, we did just type Christmas, and yes, we know it’s hardly October!

So our friends at Pizza Pronto in Penarth (@pizzapenarth) are now loading our authentic pulled pork on their beautifully formed, pizzas for October’s Pizza Month. More ways to get your Hang Fire porcine fix. And closer to home for us, the delectable deli, Elephant & Bun of Cowbridge (@elephantandbun) are about to stock our home made sauces, our first stockist…whoohoo! If you’re interested in getting your hands on any of our smoked meats, rubs and sauces asides from the above fine vendors, here’s some good news…

WE’RE TAKING ORDERS, FOR CHRISTMAS, AT THE SHOP!

Yes yes ya’ll, we have a call and collect system happening for all smoked meats, sauces, rubs and more from Dec 1st 2014. The shop isn’t open for browsing as such as we smoke to order, so make sure you get in touch before you come along and see us. We have a price list of fine meats, from turkey crowns, brined in aromatics and smoked to perfection to whole welsh lamb legs, Gessingham duck breasts plus all our beloved southern-style bbq meats. You can buy a little or a lot, it’s up to you, if you’ve got the cash, we’ve got the ‘cue. LAST, BUT CERTAINLY NOT LEAST…

We’ve been having a great time at The Pilot, Penarth (@thepilotpenarth), really busy and being able to book a table has gone down really well. We’ve been refining our menu to include burnt ends and hush puppies as permanent features as well as the delectable Texas Hot Links. Shauna seems to have found her calling by making bacon ice-cream (sells out in minutes!) to go with delicious home made pecan pie or light-as-a-feather chocolate brownies. Hugo Ball from Cardiff Life Magazine came in and reviewed us at The Pilot a week or so ago, and check out the awesome pics by Owen Matthias Photography – where the heck did he find a wood basket?! We have a Witches Brews, Blues and BBQ night lined up at The Full Moon, so come get your spicy BBQ on with us and hang out, drink some beers, eat some ‘cue and listen to some epic music on 31 October.

Hoedown at The Lansdowne!

We’re super pleased to announce that from 6th February onwards, your girls at Hang Fire Smokehouse, are partnering with The Lansdowne Pub in Canton for more smokey good times. We’ll be there every Thursday and Friday night from 5pm ’til 9pm (or sold out, whichever comes first). Ya’ll know the deal by now, you’ll need to arrive early and we don’t take bookings.  You can most certainly expect that the good folks at The Lansdowne will have some cracking ales, ciders and hard liquor to wash the ‘cue down with. #cueacwrw

We’re looking forward to creating new weekly specials, adding new sides and generally getting creative with our ‘cue. We’ll soon have our sauces and rubs for sale for you to try at home, plus we’re working on some merchandise. Any proper BBQ joint is not a proper BBQ joint without a custom t-shirt!

OLIVE MAGAZINE We also featured in Olive Magazine this month, was a super surprise. It was down to the lovely @EatsForWales for that special mention. Some cracking recipes in the magazine, saw a great terrine idea that we’re thinking of substituting with loadsa BBQ! Maybe we should start working on our own recipe book? Or perhaps the BBQ terrine is a step too far?!

CELT BREWERY We got something lined up with the lovely folks at The Celt Brewery for the 1st Feb. It’s a Fire Festival – sounds a perfect way to party and keep warm! Super Furry Animals will be there talking about a beer collaboration, we’ll be there with BBQ and beer pairings plus they promise live art creation from a Chicago based artist plus a fire sculpture at midnight. Dawgs, Brews, Blues and BBQs

A quick update on the next Smoke Dawgs Wiener Wednesday No.2, The Canadian’s Beer & Cider Festival, Blues, Brews and BBQ night with the Full Moon and upcoming Hillbilly Christmas parties.

SMOKE DAWGS WIENER WEDNESDAY
Firstly, Smoke dawgs, what a night hosted by The Canadian. The gorgeous Ellie Makes Music performed for us all, over 140 Smoke Dawgs flew out of the kitchen and our contributors in the food department @CharcutierLtd @innercitypickles @Onemilebakery and @jonesoGymru were all there to see how their produce played out in our meaty medley.

Our small menu of five authentic, American recipe, Dawgs and our Smoke Dawg, went down really well. We had two from New York and Detroit, one from Chicago and our own Hang Fire Smoke Dawg, (which of course contained BBQ). We invited the great and the good from Cardiff’s food blogging community and asked them for their valued opinion.

BEER & CIDER FESTIVAL with loads of BBQ!
And there’s this at the weekend, Oct 11-13th… Our BBQ all weekend: Fri & Sat night from 5.30pm and a Sunday lunch session from 1.30pm to 3.30pm. The range of local beers chosen are bloody bendigedig. How we’re going to stay sober enough to serve your ‘cue is anyone’s guess! Beer and Chick’n are natural bedfellows (?!), so on special, we’re smokin’ 1/2 free range birds with a sweet and spicy BBQ , bourbon glaze and a our fresh herb, Ranch dressing (an adaptation of a tasty wee recipe we picked up in San Fransisco).

Full MoonNext Up… The legendary Full Moon

Famed for it’s fine music and hard liquor…and now, Southern style American BBQ. Thursday, November 7th sees a collaboration between your friendly, neighbourhood ‘cuers and the music mecca of Cardiff to bring you Blues, Brews & BBQ. Your Hang Fire girls will be serving hot, smokey racks of ribs and the Full Moon boys will keep the American beers and fine grain liquor flowing. There’ll be rocking bands, good times and you’ll be there, thinking its your birthday, and we’re all here to celebrate it! We’ll post more details on Facebook/Twitter in the coming week.

Fancy a ‘Ya’llternative to town’ Christmas party?

Sorry to bring it up and it’s not even past Hallowe’en yet, but we just wanted to say we have a few dates left in December if you wanted to book your ‘Ya’llternative to town’ Christmas party with us at The Canadian. We have a two course BBQ buffet (served by us – and you may even get to see Sam the chef if we unchain her from the smoker) with a backdrop of original live music, great brews and a super relaxed festive atmosphere. Here’s our latest bit of meat candy for you, presenting the eagerly awaited ‘Hang Fire SmokeDawg’. An artisan frank, produced by the premier sausage maker in Wales (if not the UK), @charcutierltd. This traditional Coney recipe frank, made from Pedigree Welsh hog and cow, is smoked slowly over apple and cherry woods in our beloved smoke pitt. We’re lucky enough to have our light brioche dog buns lovingly crafted by the talented @Onemilebakery. And relishes by the domestic goddess @innercitypickle plus a handful of tasty, salty welsh crisps by spud gurus @jonesogymru.

So what’s this all about? Well, having tried many, many, tasty wee hotdogs on our recent road trip around the USA,  we decided we would not create fancy versions of the No.1 American snack, but recreate well loved, traditional recipes, using the finest Welsh produce we could find. Every month, we’ll be making different State variations. For example, at our launch, you’ll find the two original New York dogs, the classic Chicago, the Detroit Coneys and our own signature SmokeDawg (which, of course, will involve BBQ). We’ll be relying on your opinion to inform our eventual menu of the ‘best dressed SmokeDawg’, so don’t be shy in giving feedback (as long as your mouth isn’t full!). The Canadian are also offering some interesting drinks options to go with the dogs as well as a few trad’ pub games if you fancy trying your luck at skittles (it’s like 10 pin bowling but dead hard!).

We’ll be showcasing these bad puppies on monthly basis to start at The Canadian, CF24 1PN  starting Wednesday 18th September from 6pm, everyone welcome. There’s a rumour that Ellie Makes Music may serenade us with her beautiful dulcet tones and swoony folk, and to lower the tone, the Pickle Belly Newts may play a few of their acoustic bluegrass-country-folk tunes (Imagine Dolly Parton having a knees up with Chas ‘n’ Dave!)
